What is surimi

Surimi (擂り身) is minced fish meat (fish paste) being washed and dewatered, often being used as raw materials to produce seafood substitutes and popular imitation products such as crabsticks in California rolls or Kani salad, fish cakes, fish balls or Korean Odeng (오뎅). Surimi supplies high protein with low-calorie with affordable price. Surimi-based products are also economical, easy to serve, preserve, and consumed.
